Quick Vegan Snacks

I promised to give you guys some easy vegan recipes for the fast. I hope I did not disappoint, especially considering we are literally two weeks away from Easter! Say what?!

By the way, can someone please care to explain to me how in the world the month of April is already upon us? Like how?

Anywho, let's cut to the chase and get straight into the good stuff: Vegan Snacking!

These are the kind of snacks you can take with you to work, school, or just at home if you need something to munch on.

So get on reading!

Avocado on Toast

Yes. It's just avocado on toast.

Just toast some sourdough bread or any carb of your liking, and spread on a mixture of:

1/2 an avocado

Drizzle of olive oil

A squeeze of half a lemon juice

Salt and pepper to taste

You can also get creative and add on some sliced tomatoes or whatever else you can find in your pantry. I think a sprinkling of some dukkah would liven up this snack. Dukkah is a an Egyptian condiment that consists of nuts, herbs and spices. I may be posting a blog on the different spices I love to use in my cooking soon.

Chocolate-Peanut Butter Nana Ice-cream

This is a no-brainer. It's healthy, quick, and downright delicious.

Your mouth will water just looking at it.

I will create a post dedicated to this snack, but all you will need to whip up this vegan ice-cream is:

2x sliced Frozen ripe bananas

1 tbsp non-dairy milk

1 tsp vanilla extract

1 tsp cocoa powder

1 tbsp smooth peanut butter

All you need to do is mix up all of the ingredients in a food processor and voila! You got yourself a guilt free snack!

Hummus with vegetables and crackers

Now this one requires some preparation. All you need to do is make some hummus beforehand and leave it in the fridge for a few days. You can make a basic hummus, or be daring and make my Roasted Red Pepper Hummus. From there all you will need to do is have some cut up vegetables handy in the fridge, such as celery and carrots, as well as some store bought crackers in the pantry.

Just grab a small container and fill it with hummus. You can then place that in a larger container that holds the veggies and crackers. There you go. A quick snack to go!

Now you have no excuse to not make these (refer to previous post). If you ever get stuck in a rut though I always find it useful to scroll through pinterest to see if there are any snacks I can make with the ingredients I already have in the kitchen. I love getting creative with what I've got as I not only save money, but I learn to make use of everything that may eventually go to waste if left on the shelf or fridge.
