Smoky Corn Soup


So winter is fast approaching, and what better way to enjoy the autumn months (fall for those in North America) than a good helping of SOUP!

I'm a huge fan of soups, especially in the cooler seasons where the combination of heart-warming flavours and comfort food are a match made in heaven. I for one am an advocate for these dishes because of its simplicity and exceptional flavours that can easily be replicated in the kitchen. This smoky corn soup is just one of many varieties that can be best served with some warm bread or enjoyed on its own.

I experimented with this recipe after trying my brother's version of the soup, which I still crave to this day, but wanted to add some smokiness to it, so threw in some smoked paprika to enhance the taste of the sweet corn. What I love most about this dish is the creamy texture that develops from the starchiness of the potato, making this a vegan friendly fare for all to enjoy.

Smoky Corn Soup

Preparation time: 5 minutes

Cooking time: 30-40 minutes

Serves: 6-8

Ingredients

  • 1kg frozen sweet corn

  • 1L vegetable stock

  • 1 medium yellow onion, roughly chopped

  • 2 medium cloves of garlic, minced

  • 2 tsp smoked paprika

  • Salt and pepper to taste

  • 1 bay leaf

  • 1 tbsp olive oil

  • 1 large sized potato, cubed (the starchier the better)

  • 1 small jalapeno, sliced (optional)

Preparation:

  1. In a medium to large sized saucepan, pour in the olive oil and place on the stove top on medium-high heat.

  2. Add the onion and saute until slightly translucent. You can then add the garlic and seasonings of smoked paprika, salt and pepper and stir until aromatic which may take around 2-3 minutes.

  3. Pour in the vegetable stock along with the corn, potato and bay leaf and stir slightly. You can then place the lid on and leave on the stove to simmer on medium heat for 20 minutes or until the potato has softened. Remove the bay leaf before proceeding onto the next step.

  4. Transfer the soup to a heat-safe blender or use a stick blender in the saucepan to blend all of the ingredients. You can make it as chunky or as smooth at this point.

  5. Ladle onto a bowl and enjoy!
